Ingredients for 1 servings:

  • 300 g flour
  • 4 eggs
  • 100 g sugar
  • 100 ml egg liqueur
  • 125 g butter
  • 200 g confectionery (spiced almonds in white chocolate)
  • ½ bag(s) of baking powder
  • 1 lemon(s), juice
  • 400 g cranberries from the jar

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour

I bake this recipe in a 34.5 x 13 x 4 cm ceramic quiche dish from Emile Henry. Combine all the dry ingredients. Add melted butter, eggs, liqueur, and lemon juice and mix until smooth. Spoon half of the batter into the dish. Chop the spiced almonds, fold them into the remaining batter, and spoon them into the dish. Finally, spread the cranberry jam on top. Bake at 160°C (convection oven) for about 40-50 minutes. Sometimes you get so carried away by a novel that you just have to bake something else…
