Creamy Amaretto Cherry Slices

Ingredients for 1 servings:

  • 2 jars of cherry(s), drained
  • 400 g flour
  • 1 pinch of salt
  • 1 packet of baking powder
  • 250 g butter, soft
  • 180 g sugar
  • 6 eggs
  • 1 tsp vanilla extract
  • 75 g almond(s), ground
  • 6 tbsp Amaretto
  • 150 g biscuits (amaretti biscuits)
  • 3 sachets of Gelatin Fix
  • 110 g powdered sugar
  • 4 egg yolks
  • 300 g mascarpone
  • 80 ml Amaretto
  • 200 g cream
  • 1 pack of cream stiffener

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

First, sift the flour, salt, and baking powder into a bowl and set aside. Cream the butter with a mixer until light and fluffy, then stir in the sugar. Then beat in the eggs one at a time, beating each egg for 30 seconds. Stir in the vanilla extract and ground almonds. Now beat in the flour mixture and the Amaretto at low speed. Finally, fold in the Amaretti biscuits and then the cherries. Place the batter on a greased and parchment-lined deep baking sheet and bake at 150°C on the middle rack for about 40 minutes; then let it cool. Cream: Beat the powdered sugar and egg yolks at high speed with a mixer until light and fluffy. Reduce the speed, add the mascarpone and Amaretto, and beat until smooth. Stir in the Gelatin Fix (about 1 minute) and refrigerate the cream until it begins to set. Once it has set, whip the cream until stiff peaks and fold it into the Amaretto cream. Completion: Spread the cream on the cooled cake, chill the baking tray for about half an hour and store the cake preferably in a cool place.
