Creamy mushroom sauce

Ingredients for 2 servings:

  • 250 g mushrooms
  • ½ onion(s)
  • 250 ml cream
  • 100 ml water
  • 1 tsp tomato paste
  • 1 tbsp Madeira
  • 1 tbsp, leveled flour
  • salt and pepper
  • nutmeg
  • Parsley

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

delicious mushroom sauce for spaetzle, noodles and dumplings

Dice the onion. Clean and slice the mushrooms. Wash and chop the parsley. Add oil or butter to a saucepan. First, sauté the onions until translucent, then add the mushrooms and fry until hot, stirring occasionally. A dark residue may form on the bottom of the pan; this will add flavor. Reduce the heat slightly, add the tomato paste, and dust the mushrooms with flour. Continue frying for about 1 minute. Add the cream and Madeira wine and reduce the heat, then add water and continue simmering over low heat. Season the sauce to taste with salt, pepper, and nutmeg, and finish with a sprinkle of parsley. Homemade spaetzle is particularly delicious with this sauce.
