Ingredients for 2 servings:

  • 4 slice(s) of bread (multigrain bread)
  • ½ vegetable onion(s)
  • 1 small cucumber(s)
  • 1 bell pepper(s), yellow
  • 1 bell pepper(s), orange
  • 2 tomatoes
  • basil
  • olive oil
  • Vinegar (red wine vinegar)
  • Mustard
  • Salt
  • pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Cut the multigrain bread into cubes and toast them in a nonstick pan without oil. Finely slice the onion. Finely dice the cucumber, bell peppers, and tomatoes. Combine the salad ingredients with the basil. For the dressing, whisk together the oil, vinegar, and mustard and season with salt and pepper. Toss the salad with the dressing and fold in the bread cubes.
