Croquettes with avocado and pepper topping

Ingredients for 2 servings:

  • 500 g frozen croquettes
  • 2 pointed peppers
  • 2 onions, red
  • 250 g cocktail tomatoes
  • 2 garlic cloves
  • 1 avocado(s), ripe
  • 3 tbsp oil, neutral
  • 1 tbsp vinegar
  • 1 tbsp maple syrup
  • 1 organic lime(s)
  • Salt
  • Parsley, flat or coriander

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

Prepare the croquettes from the frozen freezer according to the package instructions. Meanwhile, cut the bell peppers into 1 cm pieces, peel the onions and dice them into small cubes. Quarter the cherry tomatoes. Put everything in a bowl, press the garlic over the top and mix everything together. For the dressing, finely grate the zest of the lime and squeeze out the juice. Mix together the oil, vinegar, maple syrup, 2 tablespoons of lime juice and half of the lime zest and season with salt. Just before the croquettes are ready, cut the ripe avocado into 2 cm pieces and carefully fold into the salad. Arrange the croquettes in two layers on a large plate or platter. Then spread the topping on top and pour the dressing over it. Sprinkle with the remaining lime zest and chopped herbs and serve immediately.
