Cucumber and tomato salad with fresh cress

Ingredients for 2 servings:

  • 1 cucumber(s)
  • 6 cocktail tomatoes
  • 1 onion(s), red
  • 2 tbsp white wine vinegar
  • 1 tbsp lemon juice
  • ½ tsp mustard
  • 2 tbsp rapeseed oil
  • 2 pinches of herbal salt
  • 1 pinch of ground pepper
  • 1 tsp maple syrup
  • 1 box of cress

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Peel the cucumber, trim the ends, and slice it thinly. Wash the tomatoes, halve them if necessary, and remove the stems. Peel the onion and slice it finely. For the dressing, combine the vinegar with the lemon juice, mustard, and rapeseed oil. Season with salt, pepper, and maple syrup. Serve the salad and drizzle with the dressing. Wash the cress, trim it, and scatter it over the salad.
