Curry rice deluxe

Ingredients for 3 servings:

  • 400 ml rice
  • 700 ml water
  • 1 tbsp, heaped vegetable stock
  • 2 tsp sweet paprika powder
  • 1 tsp turmeric
  • some curry powder
  • 1 tsp pepper
  • 2 tsp, heaped salt
  • 1 onion(s)
  • 3 bell peppers
  • 1 can of corn
  • 1 tbsp, heaped butter
  • 1 tbsp ketchup
  • 5 oregano, fresh
  • 5 leaves lemon balm, fresh

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 45 minutes

Simple and without meat

Combine water, vegetable stock, salt, pepper, turmeric, paprika, and rice in a saucepan or deep pan, cover, and bring to a boil over high heat. Cook for about 10 minutes. Reduce the heat slightly. Dice the onions and bell peppers and add them to the rice along with the corn. If the mixture is too dry, add a little water at a time to ensure the rice has enough liquid to simmer. Let everything simmer for about 10 minutes. Add butter and ketchup to thicken. It should form a moist mixture. Season with curry and pepper, add the finely chopped oregano and lemon balm, and let it simmer for another 5 minutes.
