- 1 kg potatoes, small new
- 250 g sea salt, coarse

Canarian shriveled potatoes
The unpeeled potatoes are covered with sea salt and boiled uncovered in a pot with just enough water to cover them. After the water has evaporated, they are dried over low heat in a covered pot for about 20 to 30 minutes until they become wrinkled. They can also be dried in the oven on a baking sheet at 180°C for about 15 minutes. A mojo sauce is traditionally served with the potatoes.
