Debrecziner – Spicy Raw Sausage

It is a spicy sausage that traditionally comes from Austria and Hungary. The relatively coarse sausage meat made from pork and/or beef is stuffed into natural casings (usually sheep casings). The Debrecziner (Debreziner) has a very spicy taste. Their reddish color is created, among other things, by adding special spices such as paprika. The raw sausage is lightly smoked.

Origin

Debrecziner originally comes from Austria or Hungary. The name of the sausage derives from a town in eastern Hungary.

Season

Debrecziner is available all year round.

Taste

Debrecziner is very spicy and, depending on how it is processed, can also be quite hot. The more paprika is used as an ingredient, the hotter the sausage is.

Use

The sausage can be used in many ways. It is heated in the water band, fried or grilled. It is a spicy ingredient in stews and hearty ragouts.

Storage

Basically, unpackaged Debrezciner should be packed well after purchase and quickly cooled again. The sausage needs to be refrigerated and is intended for consumption soon. The sausage can be stored in the fridge for 3-5 days. Packaged goods have a slightly longer shelf life as long as they are sealed.

Nutritional value/active ingredients

With around 330 kcal (1386 kJ) per 100 g and around 31 g fat, Debreziner is one of the fatty sausage types. The protein content is around 14 g and the carbohydrate content is around 0.2 g. Debrecziner also contains vitamin B1, niacin and vitamin C as well as zinc.
