Ingredients for 4 servings:
- 4 large green bell peppers
- 1 can mushrooms, approx. 200 g drained weight, finely chopped
- 1 large onion(s)
- 2 garlic cloves, pressed
- 4 tomatoes, diced
- 1 ball of mozzarella, diced
- 4 tsp, heaped Parmesan
- 2 tbsp olive oil

vegetarian dish – will also delight meat eaters
Cut off the tops of the peppers, remove the seeds, and blanch in boiling salted water, then drain. Sauté the onions, garlic, tomatoes, and mushrooms in the oil. Season with salt and pepper. Add the mozzarella. Fill the peppers with the mixture. Place in a baking dish, sprinkle with 1 teaspoon of Parmesan cheese per pepper, and bake in the oven for 10 minutes at 180°C. This also works in the microwave. There may be some filling left over; if so, simply spread it around the peppers. Serve with rice.
