Ingredients
 

  • 150 g Oatmeal
  • 150 g Pitted prunes
  • 100 g Dried apricots
  • 1 dl Milk
  • 1 dl Cream
  • 150 g Butter
  • 150 g Sugar
  • 1 pinch Salt
  • 3 piece Free range eggs
  • 1,5 tbsp Gingerbread spice
  • -
  • 1 piece Lemon untreated
  • 150 g Flour
  • 1 tsp Baking powder
  • 1,5 tbsp Rum raisins

Instructions
 

  • is for a 28cm cake pan
  • Mix the oat flakes, plums and apricots cut into small pieces with the milk and cream in a bowl and cover and leave to soak for about 15 minutes
  • Stir butter until soft then stir in sugar and salt
  • Stir in one egg after the other with the whisk of the hand mixer for about 5 Mn. keep stirring until it is a light mass
  • Mix in the oatmeal with the prunes and dried apricots, add rum raisins, gingerbread spice and zest from a lemon and mix everything briefly
  • Mix the flour and baking powder and mix in
  • Fill everything into the cake pan and bake for about 65 minutes at 180 degrees
  • in a beautiful shape also a nice souvenir because the cake has a long shelf life
