Ingredients for 8 servings:

  • 500 g onion(s)
  • 2 kg potatoes
  • 8 eggs
  • 16 slice(s) bacon, streaky
  • 8 tbsp oil
  • salt and pepper
  • nutmeg

Peel the onions, halve them lengthwise, and cut them into wedges. Sauté them in 4 tablespoons of oil, then transfer them to a large bowl and let them cool slightly. Wash the potatoes, peel them, wash them again, and coarsely grate them. Rinse them briefly under running water in a colander. Once drained, mix them with the onions. Beat the eggs and stir them into the potato and onion mixture. Season with a little salt, but generously with pepper (adMühle) and nutmeg. Pour the remaining oil into the bottom of a large (cast iron if possible) pot. Place half of the bacon slices in the pot. Pour in half of the potato and onion mixture. Cover with the remaining bacon slices and pour in the remaining potato and onion mixture, smoothing the surface. Bake on the middle shelf at 200°C (Gas 3) for 1 hour 30 minutes. Variation: add only 8 slices of bacon for the base and 2 large sausages cut into pieces to the potato dough.
