Ingredients for 1 servings:
- 7 m.-sized eggs
- 210 g sugar
- 2 packs of pudding powder for cooking (vanilla)
- 130 g flour
- 3 packs of gelatin powder
- 6 m.-sized eggs
- 300 g sugar
- 4 packets of vanilla sugar
- 2 dashes lemon juice
- 1 kg low-fat curd cheese
- 1 can of tangerine(s)
- 2 cups of cream
- 400 g marzipan – raw mass
- 200 g powdered sugar
- 2 tbsp Nutella
- 10 tbsp poppy seeds
- Fondant or marzipan residue from the ceiling
- 100 ml cream

Coming of age cake
For the batter, beat the egg whites until frothy and slowly add the sugar. Stir until the sugar has dissolved. Now fold in the egg yolks; do not stir any more. Mix the custard powder with the flour and fold into the mixture. Then bake the whole thing on a baking tray lined with baking paper at 180 degrees (preheated) for about 25 minutes. Then turn the cake out onto a surface and carefully peel off the baking paper. Once cooled, cut the base horizontally once with a long knife. For the filling, let the gelatine swell according to the instructions. Mix the quark, sugar, vanilla sugar, egg yolks and lemon juice with a mixer. Drain the mandarins, adding the reserved juice to the quark mixture. Melt the gelatine in a saucepan on the stove at low heat, then remove from the heat and stir into the quark mixture after about 6-8 minutes. If you first stir a few spoonfuls of the quark mixture into the warm gelatin, then add the gelatin-quark mixture to the quark mixture and mix well, no lumps will form. Now whip the cream and egg whites. Fold the whipped cream, beaten egg whites, and drained mandarin oranges into the quark mixture; do not stir. Place the sliced cake base on a square plate (I use a simple cutting board wrapped in aluminum foil). Make sure the whole thing will fit in the refrigerator later. Place a square cake frame around the base (this can be cut to the size you want the entire cake to be). You can buy this cake frame, but unfortunately I didn’t see it until later. So I made a frame out of cardboard lined with aluminum foil. Pour the quark mixture onto the base with the frame, place the pastry lid on top, and let the cake set in the refrigerator, preferably overnight. It’s best to prepare the marzipan the day before. To do this, knead the raw marzipan with the powdered sugar and roll out a portion of it between two layers of plastic wrap to form a thin (approx. 5 mm) marzipan lid. The remaining marzipan will be used to create the decorations for the cake. For my cake, I made daisy flowers from ready-made white fondant, but they can easily be made from the leftover marzipan. For the road, I rolled out a strip of marzipan about 10 cm wide and the appropriate length for the cake. Then I placed this strip in poppy seeds and rolled it over once with a rolling pin from the wrong side so that the “asphalt” bonds nicely with the marzipan strip. It’s best to cover the finished decorations with plastic wrap overnight to prevent them from drying out or cracking. The next day, simply remove the cake from the refrigerator, carefully remove the frame, and decorate the cake with the decorations. I completed the road with a side strip and a center strip. Now all you have to do is add little cars and traffic signs, and candles if you like. For the chocolate lettering, I briefly warmed Nutella in the microwave and piped a short saying onto the cake using a freezer bag (fill the bag with Nutella and cut a small hole in one corner). You can also decorate the edges with 100 ml of whipped cream or add a dab of cream under the candles.
