Duck breast "Hong Kong"

Ingredients for 4 servings:

  • 500 g duck breast
  • 4 carrots
  • 4 tbsp soy sauce
  • 1 tbsp Chinese spice
  • 2 stalk(s) leeks
  • 250 g soybean sprouts
  • Soy sauce
  • salt and pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Remove the skin from the duck breast and cut into thin strips. Cut the meat into strips. Fry the skin until crispy, remove, and set aside. Drain off all but 2 tablespoons of the fat and brown the meat in it. Clean and slice the carrots, add them to the meat with soy sauce and Chinese seasoning, and sauté for 10 minutes. Slice the leek, add it with the soybean sprouts, and cook in the residual heat. Season to taste with soy sauce, salt, and pepper. Plate up the duck breast and serve with the fried skin.
