Ingredients for 4 servings:

  • ¾ liter broth
  • 125 g butter
  • 250 ml milk
  • 125 g flour
  • 1 pinch of salt
  • 1 pinch of nutmeg
  • 4 eggs

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Bring the broth to a boil in a saucepan. Meanwhile, bring the milk to a boil in a saucepan with butter, salt, and nutmeg, then add the flour while stirring. Remove from the heat and stir with a wooden spoon until a smooth dough comes away from the bottom of the pan. Let it cool briefly and then fold 4 eggs into the batter, one at a time. Using two teaspoons, scoop out small dumplings and let them simmer in the broth for 10-15 minutes until tender.
