Ingredients for 5 servings:
- 400 g cream
- 75 g sugar
- 4 egg yolks
- 150 g egg liqueur
- 2 jars of morello cherries, 130 g drained weight each
- 1 packet of vanilla pudding powder
- Cinnamon powder
- 30 g cocoa powder
- 30 g sugar
- 250 g milk
- 200 g whipped cream
- 150 g dark chocolate
- 300 g chocolate cookie(s)

Whip 400g of cream until stiff peaks form. Whisk the sugar and egg yolks in a saucepan over medium heat for five minutes at 40°C. Stir in the egg liqueur and carefully fold the mixture into the whipped cream until smooth. Pour the mixture into a 30cm loaf pan lined with cling film and freeze for at least one day. Strain the cherries and reserve the juice. Briefly boil the cherry juice with the vanilla pudding powder. Add the cherries and season the compote with a pinch of cinnamon. Roughly chop the chocolate. Heat the milk in a saucepan, add the cocoa powder and sugar, and dissolve while stirring. In another saucepan, bring 200g of whipping cream to a boil, then add the cocoa-milk mixture, stirring constantly. Continue stirring and bring back to a boil, then add the chopped chocolate and melt it. Roughly crumble the chocolate cookies. Cut the parfait into slices or triangles. Place the cherry compote on the plates and pour the chocolate glaze next to it. Place the parfait on the chocolate glaze and garnish with the cookie crumble.
