Elderflower – Orange Marmalade

Ingredients for 1 servings:

  • 15 elderflower umbels
  • 10 g citric acid
  • 2 liters of orange juice
  • 2 kg gelling sugar

Instructions

Working time approx. 15 minutes; Rest period approx. 1 day; Total time approx. 1 day 15 minutes

Let the elderflower heads steep with the citric acid and orange juice in a large, lidded pot for 24 hours. After 24 hours, separate the elderflowers from the juice and boil the juice with the preserving sugar. While still hot, pour into prepared jars and seal immediately.
