Estonian lentil porridge

Ingredients for 2 servings:

  • 200 g lentils, red
  • 100 g buckwheat
  • 3 potatoes
  • 2 onions
  • 150 ml plant milk (plant drink)
  • 1.2 liters of water
  • 4 tbsp oil

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

Peel and dice the potatoes and onions. Wash the lentils and add them to a pot with the water and cook according to the package instructions. When the lentils are almost cooked, add the potatoes. Wash the buckwheat and add it to the pot with the lentils and potatoes. Continue cooking until all the water has evaporated. Lightly mash the potatoes with a wooden spoon, stirring constantly. Bring the plant-based milk to a boil, then add it to the porridge, stirring constantly. Meanwhile, fry the onions in a pan with oil until lightly browned. Season with salt and pepper. Serve the porridge topped with the onions and oil.
