Ingredients for 1 servings:

  • 1 elderflower umbel
  • 5 flowers of ground elder
  • 15 white clover flowers
  • 25 daisies and 1 young inflorescence of ground ivy
  • 1 liter of boiling water
  • 2 bags of citric acid
  • 1 kg sugar

Instructions

Working time approx. 15 minutes; Rest time approx. 3 hours; Total time approx. 3 hours 15 minutes

Shake off any beetles and other insects from the flowers and place all the flowers in a pot. Pour boiling water over them and let them steep for 2-3 hours. Strain and pour into a clean pot. Add the citric acid (10 g) and bring to a boil. When the liquid is simmering, add the sugar and dissolve it, stirring well until the liquid becomes clear again. Pour the syrup into hot bottles and seal tightly, then let it cool. Add a dash of syrup to a glass of mineral water and enjoy.
