Ingredients for 1 servings:
- 120 g margarine
- 1 pinch of salt for the margarine, if needed
- 120 g white sugar
- 1 tbsp vanilla extract
- 3 m.-sized eggs
- 200 g wheat flour type 405
- 30 g tapioca flour
- 30 g breadcrumbs, coarse, white
- 1 pinch(s) cinnamon powder
- 1 pinch(s) of mace powder
- 1 pinch(s) cardamom powder
- 1 tsp turmeric powder
- 10 g baking powder
- 4 tbsp coconut milk, creamy (Santen)
- 13 pitted dates
- 80 g desiccated coconut, fine
- 3 tbsp margarine for the mold
- 12 pitted dates
- 36 medicinal beans (kacang kapri), whole, roasted
- n. B. flowers and leaves
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes
Recipe from Lombok, Indonesia. Original title: Kurma Muffins dengan kelapa ala Novi.
Grease 12 100 ml aluminum baking molds or a muffin tin with margarine. All ingredients must be at room temperature. Melt the margarine for the batter in a double boiler, but do not heat above 45 degrees Celsius. If the margarine doesn’t taste salty, add a pinch of salt. Mix the three flours with the baking powder and spices well. Halve 13 dates lengthwise and quarter them crosswise. Beat the melted margarine with the vanilla extract and sugar using the whisk of an electric mixer for about 10 minutes until light yellow and creamy. The sugar should be mostly dissolved. Now add the eggs to the batter, one at a time while the mixer is running, mixing for about 1 minute each to ensure all the ingredients are well combined. Preheat the oven to 190 degrees Celsius. Add the flour mixture to the batter, tablespoon by tablespoon. Replace the whisk with a dough hook and mix only until the mixture is homogeneous. Then add the coconut milk, quartered dates, and desiccated coconut one at a time and mix thoroughly. Mix all over by hand once more. Fill each muffin tin about 80% full with the batter. Place the 12 whole dates vertically into the muffin tins. Garnish with the green beans. Bake in the preheated oven on the middle rack for about 20 minutes. Remove the muffins from the oven and let them cool slightly. Remove from the tins while still warm, garnish, and serve warm.
