Farmer's tomato soup

Ingredients for 6 servings:

  • 200 g ham, raw, diced
  • 1 thick vegetable onion(s), diced
  • 4 large garlic cloves, chopped
  • some olive oil
  • 1 tbsp Italian herbs, dried mixed
  • Salt
  • pepper
  • 3 tbsp tomato paste
  • 0.2 liters of red wine
  • 3 small cans of tomatoes, chopped
  • 250 ml meat broth
  • e.g. Creme legere or sour cream
  • Parsley, fresh or dried
  • Parmesan, freshly grated
  • e.g. baguette(s) or farmer’s bread

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Brown the ham, diced onion, and garlic in oil, season with Italian herbs, salt, and pepper, sauté the tomato paste, and deglaze with the red wine. Stir in the canned tomatoes and top up with broth. Simmer for 10 minutes. If necessary, add more tomato paste to thicken the sauce. Stir in crème fraîche or sour cream, if desired. Sprinkle with parsley for garnish. Serve with Parmesan cheese; perhaps with baguette or hearty farmhouse bread.
