- 1 bulb(s) of fennel
- 1 orange(s)
- 1 onion(s), red
- 3 tbsp fennel – green
- 3 tbsp olive oil
- salt and pepper

Sicilian specialty
Wash the fennel and slice it thinly. Peel the orange, remove the white pith, and slice it thinly. Slice the onion into rings. Finely chop the fennel leaves. Place all ingredients in a bowl and toss with olive oil. Season with salt and pepper. To allow the salad to develop its full flavor, let it stand, covered, for half a day before eating, stirring occasionally.
