Ingredients for 1 servings:
- 2 carrots
- 1 beetroot
- 1 garlic clove(s)
- 1 onion(s), red
- 1 handful of berries, frozen
- 2 tbsp olive oil
- 1 tbsp vinegar
- 1 tsp thyme, dried
- salt and pepper
- 1 feta cheese, possibly vegan
- 1 tbsp maple syrup
- 1 pinch of nutmeg
- 1 tsp rosemary
- 30 g nuts, ground, or breadcrumbs

Cut the carrots and beetroot into sticks. Finely dice the garlic and onion. Cook all the vegetable ingredients in a covered pan for 20 minutes. Brush the feta with the maple syrup and coat with nutmeg, rosemary, and nuts. Bake the feta for 20 minutes at 180°C (top/bottom heat). This dish contains approximately 500 kcal per serving.
