Filled walnut cookies

Ingredients for 1 servings:

  • 150 g butter
  • 75 g sugar
  • 1 egg(s)
  • 80 g walnuts, grated
  • 250 g flour
  • 1 pinch of salt
  • 50 g butter
  • 50 g sugar
  • 40 g walnuts, grated
  • 75 g apricot jam
  • 80 g walnuts, halved
  • Cake icing (chocolate icing)

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

makes about 30 cookies

Quickly knead the butter with sugar, beaten egg, grated walnuts, flour, and salt into a firm dough and let it rest in a cool place for at least 1 hour. In the meantime, make the filling: melt the butter in a saucepan, and mix it with the sugar, grated walnuts, and apricot jam. Roll out the well-chilled dough to about ½ cm thick, cut out round cookies (about 4.5 cm in diameter), and bake at 180°C on the middle rack for about 15 minutes. Let cool on a wire rack. Then spread the filling on each cookie and place a second one on top. Using a little of the filling, secure the walnut half to the top of the cookie. Let it dry again. Finally, spread some chocolate glaze on top and let it dry one last time. These cookies may take a little longer, but they’re worth the effort! I always make double the amount, but I still have to hide them well so that a few of them survive to Christmas!
