Ingredients for 4 servings:

  • 200 ml orange juice
  • 200 ml white wine
  • 200 ml milk or cream
  • 600 g fish, fresh, firm
  • 100 g mussel(s) – meat, fresh
  • 100 g crab meat, fresh
  • salt and pepper
  • 1 lemon(s), juice
  • pine nuts
  • Raisins
  • butter
  • Flour

Working time approx. 15 minutes; Rest time approx. 20 hours; Total time approx. 20 hours 15 minutes

Fish ragout with mussels and crabs

Cut the fish into bite-sized pieces, season with salt and pepper, pour over the lemon juice, and cover and marinate for 20 minutes. Bring the orange juice and white wine to a gentle boil in a pan. Add the fish and marinade to the liquid. Add the seafood, pine nuts, and raisins, and simmer for about 10-15 minutes. Add the milk or cream. Mix a little butter and flour together and add to thicken. Season to taste with salt and pepper.
