Fish soup with seafood

Ingredients for 3 servings:

  • 2 small leeks
  • 2 large onions
  • 3 thick carrots, grated
  • 1 kg mussels
  • 1 bowl of frozen seafood, approx. 250 g
  • salt and pepper
  • Vegetable broth or meat broth
  • 250 g scampi
  • 250 g salmon

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour

Sauté the leeks, onions, and grated carrots in butter. Add enough water to cover the vegetables. Add salt, pepper, and vegetable or meat stock. Cook the vegetables for 10 minutes. Add the mussels and season well with pepper. Once the mussels are open, remove them all and return them to the broth. Add the diced salmon, scampi, and seafood and let them simmer briefly. Season the soup with salt and pepper if desired.
