Fitness banana bread with lots of protein for athletes

Ingredients for 4 servings:

  • 150 g coconut flour
  • 50 g oat flakes
  • 50 g hazelnuts, ground or almonds
  • 10 g flaxseed meal
  • 20 g protein powder, vanilla
  • 3 eggs
  • 3 banana(s), ripe
  • 1 apple
  • 20 g butter
  • 50 ml oat milk (oat drink) or soy or almond milk
  • 1 packet of vanilla sugar
  • 1 packet of baking powder
  • possibly cinnamon powder
  • Fat for the mold

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 15 minutes

Preheat oven to 180°C (350°F). Grease a loaf pan (approx. 28-30 cm). Puree the bananas, apple, eggs, and oat milk. Mix the remaining ingredients. Add cinnamon, if desired. Mix the liquid and dry ingredients with a mixer. Pour the batter into the pan and bake for 45-60 minutes.
