Ingredients for 8 servings:

  • 375 g flour
  • 1 tsp baking powder
  • ½ tsp salt
  • 160 ml water
  • 60 ml oil
  • some oil for the pan

Instructions

Working time approx. 7 minutes; Rest time approx. 15 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 27 minutes

Mix all ingredients together and knead until the dough is smooth and supple. Then cover the dough and let it rest for about 15 minutes. Cut the dough into 8 pieces, shape them into balls, flatten them, and roll them out one at a time. Cover the remaining pieces of dough while you cook to prevent them from drying out. Heat a pan over medium heat and brush with oil. Cook the dough on each side until bubbles or light brown spots form. Wrap the tortillas individually in a clean, damp tea towel to keep them soft. Serve warm or store in an airtight container in the refrigerator. They are also great for freezing; place baking paper or cling film between the tortillas to prevent them from sticking together. To thaw, briefly place them in the microwave or oven.
