Ingredients for 4 servings:
- 2 cans of brown beans (fool)
- 4 tomatoes, ripe, diced
- 1 cucumber(s), diced
- 4 tbsp olive oil
- 2 onions
- 1 tbsp lemon juice
- salt and pepper

Working time approx. 15 minutes; Rest time approx. 1 day 6 hours; Total time approx. 1 day 6 hours 15 minutes
Egyptian breakfast
First, finely chop the onion. Then fry it in a large pan in olive oil until translucent. Open the two cans of fool beans, but don’t discard the liquid! When the onions are nice and translucent, add the beans and simmer over low heat for about 5 minutes. When the beans are soft enough to mash, add the diced tomatoes and cucumber and heat briefly. Season with salt, pepper, and lemon juice, and serve with fresh flatbread.
