Ingredients for 8 servings:

  • 400 g strawberries, cleaned and sliced
  • 150 g cane sugar
  • 2 tbsp balsamic vinegar
  • 1 tsp lemon juice

Instructions

Working time approx. 20 minutes; Rest time approx. 5 hours; Cooking/baking time approx. 5 minutes; Total time approx. 5 hours 25 minutes

Strawberry ice cream on a stick

Combine the strawberries with the sugar and let it steep for about 15 minutes. Then bring the fruit to a boil with 120 ml of water. Simmer for a few minutes while stirring until the sugar has dissolved. Remove the mixture from the heat and let it cool, then blend it in a blender with the balsamic vinegar and lemon juice. Divide the mixture among the popsicle molds, not filling them quite to the top, and let it freeze for about 2 hours. Then insert a wooden skewer into each one and let it freeze for at least another 3 hours. Remove the ice cream to serve and carefully remove it from the molds.
