Ingredients for 4 servings:

  • 2 bulbs garlic, fresh
  • ⅛ liter milk
  • salt and pepper
  • nutmeg
  • 60 g sweet cream butter
  • ¼ liter of water

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 1 hour 30 minutes; Total time approx. 1 hour 40 minutes

Peel the garlic cloves, place them in a small saucepan, and add milk and 1/4 liter of water. Cover and simmer over very low heat for about 1 1/2 hours. Just before the end of the cooking time, season with salt, pepper, and a little grated nutmeg. Purée the sauce with a hand blender, bring back to a boil, and stir in the butter. A classic accompaniment to leg of lamb, it also tastes great with mashed potatoes.
