French onion soup

Ingredients for 4 servings:

  • 4 large onions
  • 60 g butter
  • 250 ml water
  • 1 liter beef broth
  • 8 slices of baguette
  • 60 g Cheddar cheese, grated

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Slice the onions into thin rings. Melt the butter in a large saucepan and add the onions. Brown over medium heat for 5-10 minutes, stirring constantly. Do not allow the onions to blacken. Add water and bring to a boil. Reduce heat and simmer, covered, for 15 minutes. Add the broth, bring to a boil, and simmer for 3-5 minutes. Brown 3 slices of bread on both sides under the broiler. Sprinkle with grated cheese and toast for another minute, until the cheese is melted. Transfer the baked baguette to a serving bowl and ladle the soup over it. Serve hot.
