Ingredients for 2 servings:

  • 50 g soy shreds
  • 500 ml water
  • ½ tsp salt
  • 1 tsp vegetable broth (instant)
  • 4 tsp olive oil
  • 2 onions, chopped
  • 2 cloves garlic, finely chopped
  • 250 g cucumber(s), halved and sliced
  • 5 tomatoes, diced
  • 2 tbsp red wine
  • 4 tbsp water
  • 2 tbsp sour cream
  • Salt
  • pepper
  • Paprika powder
  • Herbs of Provence

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Bring water with salt and vegetable stock to a boil, then cook the soy strips for 20 minutes over medium heat. Drain the remaining water and let the strips drain. Heat oil in a non-stick pan and fry the soy strips. Once the strips have taken on some color, add the onions and garlic and sauté. Then add the cucumber, tomatoes, red wine, and water. Season with salt, pepper, paprika, and Provençal herbs. Cook the vegetables for about 5 minutes until al dente. Stir in the sour cream and season to taste. Serve with rice or baguette.
