Fried egg and tomato pot

Ingredients for 1 servings:

  • 200 g tomatoes, roughly diced
  • 1 bell pepper(s), yellow, roughly diced
  • 1 medium-sized onion(s), roughly diced
  • 1 garlic clove(s), finely chopped
  • 2 tbsp tomato paste
  • Paprika powder, hot
  • salt and pepper
  • Chives, for garnishing
  • n. B. Grated cheese for sprinkling (e.g. Gouda, Emmental)
  • olive oil
  • 1 egg(s)

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Sauté the onions and bell peppers in oil. Add the tomatoes, tomato paste, and garlic and heat briefly. Season with paprika, salt, and pepper. Pour the mixture into a baking dish. Carefully crack the egg and pour it over the top. Sprinkle with grated cheese and bake in a preheated oven (do not use fan-assisted oven! This will dry out the egg too much) at 200°C for 10-15 minutes. Sprinkle with chives. Serve with a crisp green salad, baguette, and a dry white wine.
