Ingredients for 1 servings:
- 150 g potatoes, floury, cooked
- 2 eggs
- 15 g Parmesan, freshly grated
- salt and pepper
- nutmeg
- some chives, chopped
- some oil or clarified butter for frying
- 1 slice(s) sausage (beer sausage) or meatloaf, approx. 80 – 100 g
- some chives, chopped for garnishing
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 12 minutes; Total time approx. 22 minutes
Potato cakes, fried sausage slice and fried egg
Peel the potatoes and press them through a potato ricer. Add 1 egg, Parmesan cheese, chives, salt, pepper, and nutmeg to the potatoes, knead everything thoroughly, and season again to taste. Form the mixture into potato cakes, slightly larger than the sausage slice, and fry in a nonstick pan over very low heat for about 6 minutes on each side. During the last 6 minutes, add the sausage slice to the pan and fry on both sides. Also during the last 6 minutes, brush a nonstick pan with oil and add the second egg to the cold pan. Now heat the pan. As soon as the egg starts to cook, you can turn the heat off after a moment; the residual heat will allow the egg white to set. If you prefer a more cooked egg, you can also fry the yolk briefly on the other side; it will just look less appealing. Place the potato cake on a plate, top with the fried sausage slice, and then the fried egg. Garnish with chives. You could eat a salad with it.
