Ingredients for 2 servings:

  • 500 g potatoes, floury
  • 1 cup milk
  • 1 tbsp butter
  • nutmeg
  • salt and pepper

Instructions

Working time approx. 50 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 30 minutes

Mashed potatoes with roasted flavor

Cook the potatoes in their skins in a steamer until soft. Briefly dip the hot potatoes in cold water and peel. Heat the milk in a saucepan and season with salt, pepper, and nutmeg. Once all the potatoes are peeled, melt the butter in a large saucepan, add the peeled potatoes, and stir with a wooden spoon. Stirring creates friction, and a layer forms on the bottom of the pan. Fry this over medium heat until it begins to brown. Then add the milk, mash the potatoes with a potato masher, and break them up vigorously several times with a wooden spoon. Add more milk and butter if necessary. The roasted aromas give the mashed potatoes a fried potato flavor, the intensity of which can be adjusted by browning them more or less. Note: You can also peel the potatoes before steaming, but they taste better when cooked in their skins.
