Ingredients for 2 servings:

  • 250 g pasta (also cooked leftovers from the day before)
  • 3 onions, finely chopped
  • 2 eggs
  • 1 shot of milk
  • Oil for frying
  • Worcestershire sauce, a few dashes of it
  • n. B. Sambal Oelek
  • Salt
  • pepper

What to do with yesterday’s pasta?

In a bowl, whisk the eggs with a splash of milk, salt, and pepper. Cook the noodles in salted water until tender—assuming there are no leftovers from the day before—then drain well. Fry them in a pan or wok with hot oil until crispy. Add the onions and fry briefly (but not for too long, so they still retain their bite). Whisk the egg, pour it over the noodles, and stir-fry gently until set. Season to taste with a few dashes of Worcestershire sauce, sambal oelek, salt, and pepper. Of course, you can stir-fry all kinds of vegetables, meat, tofu, bean sprouts, or similar. However, I prefer the version with onions and egg, then spicy seasoning.
