Ingredients for 4 servings:
- 250 g Chinese egg noodles (Mie noodles)
- salt water
- 400 g chicken breast
- 1 head of broccoli
- 1 mango(s), not too ripe
- Soy sauce
- salt and pepper
- n. B. Vegetable broth, granulated
- some oil (sunflower oil)
- possibly pumpkin seed oil
- possibly sauce (peanut sauce) or
- Peanut butter or
- Mango chutney
Instructions
Working time approx. 25 minutes; Total time approx. 25 minutes
This dish can be prepared in a wok.
Cut the chicken breast fillet into small cubes. In a bowl, mix about 3 tablespoons of soy sauce, salt, pepper, and 1 teaspoon of vegetable stock, then marinate the meat. Cook the noodles in hot, salted water according to the package instructions, then drain. Peel and deseed the mango, and cut into very small pieces. Remove a generous amount of the stalk from the broccoli. Peel back a little of the outer layer. Cut the stalk into very thin slices. Add about 3 tablespoons of sunflower oil to the wok and heat until hot. Add the chicken. Add the broccoli slices and mango pieces. Finally, add the noodles. Season to taste with soy sauce, vegetable stock, or pumpkin seed oil, if desired, and serve immediately. For variation, you can also season the dish with peanut sauce, peanut butter, or mango chutney.
