Fried potatoes from the Börde region

Ingredients for 2 servings:

  • 750 g potatoes
  • 100 g butter
  • 100 g bacon, diced
  • 1 large onion(s), diced
  • ½ tsp paprika powder, hot
  • 1 tsp caraway seeds
  • 200 g pasta
  • Salt
  • some marjoram
  • Hard cheese, grated, optional

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 5 minutes

Recipe from Saxony-Anhalt

Peel the potatoes, cut into thick strips, and boil until half-cooked. Drain. Brown the bacon in the heated butter, add the diced onion, and fry until translucent. Add the potatoes and roast until golden brown. Sprinkle with paprika and caraway seeds and sprinkle with marjoram. Cook the pasta in salted water according to the package instructions. Drain, let cool, loosen, and mix gently. Add salt if desired. Optionally, sprinkle everything with grated cheese. Tip: If you’re hungry, serve with a hot Mettwurst sausage.
