Fried potatoes with pickles, cherry tomatoes and Vienna sausages

Ingredients for 2 servings:

  • 4 pickles
  • 200 g cherry tomatoes
  • 2 large Vienna sausages
  • 1 bunch of chives
  • 1 tbsp clarified butter
  • 500 g potatoes, waxy, cooked
  • Salt
  • Pepper, mixed or black, freshly ground

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Drain the pickles and slice them. Rinse, trim, and halve the cherry tomatoes. Slice the Vienna sausages. Rinse the chives, shake them dry, and cut them into fine rolls. Heat the clarified butter in a wok or large, nonstick pan and fry the potato slices and Vienna sausage slices for about 5 to 10 minutes, turning occasionally. Then fold in the pickle slices, halved cherry tomatoes, and chives. Season with salt and pepper. Serve with a green salad and remoulade sauce.
