Fried rice balls

Ingredients for 4 servings:

  • 300 g rice (round grain)
  • 50 g Parmesan, grated
  • 150g mozzarella
  • 2 eggs
  • 2 tbsp butter
  • 4 tbsp breadcrumbs
  • 2 tbsp flour
  • salt and pepper
  • Flour
  • Oil for frying

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Cook short-grain rice according to the package instructions. Mix with Parmesan cheese, butter, and one egg. In a deep dish, whisk the second egg and season lightly with salt and pepper. Cut the mozzarella into small cubes. Let the rice cool and form into 8 balls. Make a hollow in the balls and fill with mozzarella. Dust the rice balls with flour and coat with egg and breadcrumbs. Deep-fry in batches.
