Fried rice noodles with chard

Ingredients for 4 servings:

  • 400 g tagliatelle noodles (Chinese rice noodles, alternatively regular noodles)
  • Salt
  • 1 kg chard
  • 200 g carrot(s)
  • Oil (sesame oil)
  • 2 eggs
  • 125 ml soy sauce
  • Ginger, fresh
  • pepper
  • Sambal Oelek, to taste

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Cook the rice noodles in plenty of salted water until al dente. Cut the chard, including the stalks, and the carrots into thin strips and sauté in a pan with sesame oil. Meanwhile, make very dry scrambled eggs from the eggs in a small pan and set aside. Now add the hot, drained rice noodles and a little finely chopped ginger to the chard and carrots in the pan and fry thoroughly. Deglaze with soy sauce and fry briefly. Season with pepper. Then add the dry scrambled eggs and toss well again. If you like spicy food, you can add a fiery touch to this Asian noodle dish with a little sambal oelek.
