Fried water spinach in yellow bean sauce

Ingredients for 2 servings:

  • 250 g spinach (water spinach, Asian store)
  • 1 tbsp yellow beans (taujiau), pickled from the jar, rinsed
  • 1 tbsp soy sauce, light
  • 1 tbsp oyster sauce
  • 1 garlic clove(s)
  • 4 small shallots (Thai shallots), red
  • 2 spring onions (Thai spring onions)
  • some palm sugar, crushed
  • Oil (peanut or soybean oil) for frying

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Wash the water spinach. Cut the leaves and tender stems into bite-sized strips. Heat a little oil in a separate pan. Add the garlic and shallots and fry. Finally, add the spring onions and cook briefly. In a little heated oil in a wok, stir-fry the yellow beans and some crushed palm sugar for about 1 minute. Add the water spinach and season with soy sauce and oyster sauce. Serve the water spinach with the beans. Sprinkle the fried shallots, garlic, and spring onions over the top. Serve immediately.
