Fruity and cheesy New Year's cake

Ingredients for 1 servings:

  • 1,000 g low-fat quark (lactose-free is also possible)
  • 5 eggs
  • 50 g melted butter (optionally lactose-free) or margarine
  • 1 tbsp Stevia sweetener
  • ½ tbsp lemon flavor
  • 1 packet of vanilla pudding powder
  • 1 mango(s), ripe
  • 1 large apple, organic
  • 1 pinch of salt
  • some cinnamon

Instructions

Working time approx. 25 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 1 hour 10 minutes; Total time approx. 1 hour 45 minutes

Cheesecake without base, easy to digest, lactose-free version possible, with Stevia

Preheat oven to 180°C. Grease a round baking pan. Wash, peel, and chop the mango. Rinse the apple thoroughly and cut it into wedges. Set the fruit aside. Separate the eggs. Beat the egg whites with a pinch of salt until stiff peaks form. Then mix the egg yolks with the low-fat quark, melted butter, and vanilla pudding powder. Add granulated sweetener with stevia and lemon flavor to taste. Mix everything together again well. Carefully fold in the mango pieces and egg whites with a tablespoon. Pour the quark mixture into the prepared baking pan and smooth it down. Arrange the apple slices on top. Sprinkle with a little cinnamon. Bake at 160-170°C (top and bottom heat) for about 60-70 minutes, until the surface is light brown. To prevent it from getting too dark, cover with aluminum foil towards the end of the baking time. Leave the cake in the oven for another 10 minutes after baking. Let cool and store in the refrigerator.
