Fruity fennel salad with cottage cheese

Ingredients for 1 servings:

  • 1 bulb(s) of fennel
  • 1 m.-large nectarine(s)
  • 150 g cottage cheese, with herbs
  • 1 tbsp maple syrup
  • 3 tbsp balsamic vinegar
  • salt and pepper

Instructions

Working time approx. 10 minutes; Rest time approx. 1 hour 30 minutes; Total time approx. 1 hour 40 minutes

Finely grate the fennel and chop the nectarines into small pieces. Mix with maple syrup, balsamic vinegar, salt, and pepper and let it sit for at least 1.5 hours; the fennel should be noticeably less crunchy by this time. Then stir in the cottage cheese. Serve as a filling main course for one person, or as a side salad or appetizer for 3-4 people.
