Ingredients for 2 servings:
- 1,000 g green beans (bush or broad beans or similar)
- 1 bulb(s) garlic
- 300 g sheep’s cheese, possibly with shepherd’s herbs
- 200 g tomato paste
- 4 onions
- 100 ml sunflower oil
- salt and pepper
Instructions
Working time approx. 45 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 25 minutes
vegetarian stew or side dish
Snap off the ends of the beans and break the beans into pieces about 3 cm long. Dice the onions and peel and finely chop the garlic cloves. Heat the oil in a large pot and sauté the onions and garlic until translucent. Then add the beans and stir well to ensure the onions and garlic are well mixed with the beans. Season with salt and pepper to taste. Cook the whole thing over low heat with the lid on for about 30 minutes. At the end of the cooking time, add the tomato paste and mix thoroughly. Then gradually crumble the feta cheese into the pot, cover the pot, and melt the feta cheese over the lowest possible heat for about 5 minutes. Then stir thoroughly to ensure the cheese is distributed as evenly as possible throughout the mixture. The recipe is incredibly simple and delicious, but unfortunately, it doesn’t look particularly attractive (please don’t let that put you off). You can also serve the “Garlic Beans with Feta Cheese” as a side dish to roasted meat, but it’s intended as more than just a very spicy vegetarian stew. The specified amount is enough for about 2-3 people, depending on your appetite. Please don’t be put off by the large amount of garlic. This is very important and gives the recipe its special flavor. The unpleasant smell is kept to a minimum because the garlic is thoroughly braised.
