Gnocchi and cucumber salad

Ingredients for 4 servings:

  • 500 g gnocchi
  • 1 cucumber(s)
  • 1 pack of feta cheese or shepherd’s cheese, approx. 150 – 200 g
  • 5 tbsp olive oil
  • 3 tbsp balsamic vinegar, light
  • 1 onion(s)
  • salt and pepper
  • Mustard
  • Herbs, Italian

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

Cook the gnocchi according to the package instructions, then drain and let cool. Dice the cucumber and feta into bite-sized pieces, and finely chop the onion. In a bowl, make the dressing with oil, vinegar, and onion, seasoning with a little mustard, salt, pepper, and Italian herbs. Add the cucumber, feta, and the now-cooled gnocchi to the dressing and mix well. Let it sit for one to two hours. This will make it even more delicious, but it’s also delicious eaten straight away.
