Gnocchi, avocado and tomato salad

Ingredients for 4 servings:

  • 500 g gnocchi from the refrigerated section
  • 1 avocado(s)
  • 1 onion(s), red
  • 250 g feta cheese
  • 15 cocktail tomatoes
  • 3 tbsp Crema di Balsamic vinegar
  • 3 tbsp olive oil
  • 2 tsp herbs, Italian or Provençal
  • salt and pepper
  • 1 tsp mustard

Instructions

Working time approx. 15 minutes; Rest time approx. 12 hours; Cooking/baking time approx. 10 minutes; Total time approx. 12 hours 25 minutes

Cook the gnocchi according to the package instructions, drain, and let cool. Finely chop the red onion, cut the pitted and peeled avocado and cherry tomatoes into bite-sized pieces, and dice the feta. Mix together a dressing of olive oil, balsamic vinegar, mustard, herbs, salt, and pepper, and season to taste. Toss the gnocchi and the remaining chopped ingredients with the dressing and let the salad marinate for up to 12 hours, depending on your taste. It’s also delicious served immediately while still slightly warm!
