Vegetarian gnocchi casserole – you need these ingredients
The vegetarian gnocchi casserole is quick and easy to prepare, you can read everything you need here:
- 1kg gnocchi
- 2 cans of tomatoes
- 1 cup of sour cream or creme fraiche
- Grated cheese
- 400g mushrooms, 1 aubergine, 1 zucchini, 1 onion, 1 large clove of garlic
- Salt, pepper, a little wine to deglaze, balsamic vinegar, tomato paste, and olive oil
Preparation of the casserole
Start by cooking the gnocchi according to the package directions.
- Meanwhile, chop the vegetables, onions, and garlic and sauté them in olive oil. It’s best to add the garlic towards the end so it doesn’t burn.
- Deglaze the vegetable pan with some white or red wine and a dash of balsamic vinegar and then add the canned tomatoes and tomato paste, let everything simmer again.
- Finally add the sour cream and season with salt, pepper, and Italian herbs. If necessary, add a pinch of sugar to make the tomato-vegetable sauce really fruity.
- Mix the cooked gnocchi and the vegetable pan in a casserole dish and sprinkle with grated cheese.
- Bake in the oven for about 20 minutes at 180 °C until the cheese has melted.
