Gnocchi pan

Ingredients for 4 servings:

  • 250 g zucchini
  • 2 bell peppers, red
  • 1 garlic clove(s)
  • 3 sprigs of oregano
  • 2 chicken breast fillets, 200 g each
  • 4 tbsp olive oil
  • 500 g gnocchi
  • 200 ml vegetable stock
  • salt and pepper

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Slice the zucchini. Dice the bell peppers. Finely dice the garlic. Finely chop the oregano. Cut the chicken breast into strips. Heat 2 tablespoons of oil. Brown the meat on all sides for about 3 minutes. Remove. Fry the gnocchi in the remaining fat for about 3 minutes until light brown, then remove. Heat 2 tablespoons of oil in a pan. Add the zucchini and bell peppers and sauté for 6 minutes. Add the garlic and oregano, and sauté briefly. Add the meat and gnocchi, pour in the broth, and bring to a boil. Season with salt and pepper.
